Snack Attack: Marshmallow Rice Crisps

While I was "cleaning" the kitchen on Monday night, I found a whole bunch of left over marshmallow from the last BBQ we had. 

What better thing to make than marshmallow crisps? heehee.. 
These were chewy and crunchy, absolutely divine. yumm

Recipe:
For 6x6 inches pan:
1 handful of large marshmallow about 12 pieces.
1.5 cups of Rice Crisps
Your choice of nuts or dry fruits

1. Wet the marshmallows under tap water, then place them in a microwave safe bowl. Pop into the microwave for about 30seconds. (the marshmallow will double in size)
2. Take out from the microwave and stir until it you get a creamy consistency.
3. Stir in the rice crisps and nuts/dried fruits into the marshmallow.
4. Spoon unto a grease tupperware/pan and press into the pan with the back of the spoon.
5. Pop into the fridge for about 1 hour. Then cut into squares.

Variations:
If you like a bit of chocolate in your marshmallow rice crisps, chop a handful of chocolate of your choice and pop then in the microwave together with the marshmallow then stir throughly before adding the rice crisps.
Or you can add chocolate chips together with the rice crisps and nuts for the extra bite.

  2. LOL, it was yummy! the 1st time my dad asked me to make MORE! LOL..

    YES! macaroons are getting popular! but hor.. very difficult!
    Will Look out for "easy" recipes. lol
